Peel and halve cooked eggs. Remove yolks and place in a small bowl. Add remaining ingredients, except paprika. Beat with an electric mixer until smooth and creamy. Spoon into egg whites (If you have a cookie press, spoon egg yolk mixture into cylinder and fill the egg whites). Sprinkle with paprika. Yield: 24. *To make perfect hard boiled eggs that easily shell do the following: Place eggs in a glass pan. Cover with lukewarm water and let stand for 10 minutes; drain. Cover eggs with lukewarm water; add 1 Tablespoon salt. Cook, uncovered over medium heat until water boils. Cover pan and reduce heat to low. Simmer for 20 minutes. Remove from heat, pour off hot water, and run under cold water to cool the eggs. |
