Hummus

2 cups canned chick-peas, drained
3 Tablespoons olive oil
2 Tablespoons tahini (sesame paste)
1 Tablespoon freshly squeezed lemon juice
2 large cloves garlic, minced
½ teaspoon salt
Freshly ground pepper

Place all ingredients in blender or food processor; purée. Season carefully to taste. Serve with pita chips. Yield: 2 cups.
