Sugar and Spice Pecans

1 egg white
1 Tablespoon butter, melted
2 cups pecan halves
½ cup sugar
½ teaspoon salt
½ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
¾ teaspoon ground allspice

Preheat oven to 300º F.

Beat egg white (at room temperature) until stiff peaks form; fold in butter. Add pecans, tossing gently to coat.

Combine sugar, salt, cinnamon, nutmeg and allspice in a small bowl. Sprinkle 2 Tablespoons sugar mixture on ungreased baking sheet. Dredge pecans in remaining sugar mixture. Spread pecans on a baking sheet and sprinkle on any remaining sugar mixture. Bake for 20 minutes, stirring after 10 minutes. Separate pecans with fork; let cool. Store in an airtight container. Yield: 2 cups.
