Toasted Cheddar Wafers

½ cup butter, softened
8 ounces sharp Cheddar cheese, shredded
1 cup all purpose flour
½ teaspoon Tabasco sauce
¼ teaspoon salt
¼ cup sesame seeds

In a medium bowl, beat butter or margarine until smooth; add cheese and mix until well blended. Add flour, Tabasco sauce and salt; stir until well blended. Divide mixture into 4 parts. Shape each into a log 1-inch in diameter. Wrap in wax paper. Refrigerate overnight.

Preheat oven to 400º F.

Slice chilled logs ¼-inch thick (15 slices). Place each slice 1-inch apart on ungreased baking sheets. Sprinkle tops with sesame seeds. Bake 8 to 10 minutes, or until edges are golden brown. Serve immediately, or cool and freeze. If frozen, reheat in a 375º F oven 5 to 7 minutes. Serve warm. Yield: 60 wafers.
