Banana Nut Bread

½ cup shortening
1 cup sugar
½ teaspoon salt
3 teaspoons baking powder
1 teaspoon vanilla extract
2 eggs
1 cup ripe, mashed banana
1 teaspoon lemon juice
2 cups all purpose flour
1 cup chopped pecans

Preheat oven to 375° F. Grease 1 loaf pan.

Cream shortening, sugar, salt and baking powder. Add vanilla extract and mix well. Beat eggs until light; add to shortening mixture. Add lemon juice to banana; blend with shortening mixture. Stir in flour. Add pecans and mix well. Pour into loaf pan and bake for 1½ hours at 375° F. Remove from oven and let sit for 10 minutes. Remove from loaf pan. Cool completely. Yield: 1 loaf.
