Black Bread Rolls (Bread Machine)

2/3 cup strong brewed coffed (room temperature)
2 Tablespoons vegetable oil
2 Tablespoons dark molasses
1 Tablespoons unsweetened cocoa powder
1 Tablespoon brown sugar
¾ teaspoon salt
½ cup whole wheat flour
½ cup rye flour
1 cup bread flour
1 Tablespoon vital gluten
1½ teaspoons active dry yeast

Place all ingredients, in the order lised into the pan of bread machine. Program the machine for dough cycle. Adjust the dough's consistency with additional flour or water, as necessary. Allow the machine to complete its cycle.

Turn dough onto floured surface. Scale the dough into 2-ounce pieces. Fashion pieces into balls and place on parchment lined cookie sheets.

Turn on oven for exactly 1 minute 10 seconds. Turn off. Place rolls in warm oven until doubled in size, about 2 hours. Remove from oven.

Preheat oven to 375° F. Place an iron skillet on bottom shelf for about 5 minutes. Pour 2 cups of boiling water onto hot skillet to produce steam in oven. Bake rolls for 20 minutes. Yield: 9 rolls.
