Claudia's Boston Brown Bread

16 ounces Craisins
2 Tablespoons butter
2 cups boiling water
2 teaspoons baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon vanilla extract
2 eggs
4 cups flour
1 cup chopped pecans

Preheat oven to 350° F.

Mix Craisins, butter, boiling water, baking soda and salt in a large bowl. Let sit until cool. Add remaining ingredients to cooled mixture; mix well.

Grease 6-7 clean 14.5 ounce vegetable cans. Fill prepared cans 2/3 full with batter. Bake for one hour. Remove from cans. Serve with butter or cream cheese. Yield: 6 to 7 round loaves.
