Ciabatta Rolls (Bread Machine)

1½ cup plus 1 Tablespoon water
1 teaspoon salt
1 teaspoon sugar
1 Tablespoon olive oil
3¼ cups bread flour
2 teaspoons yeast

Place all of the dough ingredients into the pan of bread machine in the order listed. Program the machine for the dough setting and press Start. Examine the dough about half way through the kneading cycle; it should be very tacky, but holding its shape somewhat. Adjust the dough's consistency with additional flour or water, as necessary. Allow the machine to complete its cycle.

Turn dough onto floured surface. Scale the dough into 2-ounce pieces. Fashion pieces into balls and place on parchment lined cookie sheets.

Turn on oven for exactly 1 minute 10 seconds. Turn off. Place rolls in warm oven until doubled in size, about 2 hours. Remove from oven.

Preheat oven to 375° F. Place an iron skillet on bottom shelf for about 5 minutes. Pour 2 cups of boiling water onto hot skillet to produce steam in oven. Brush top of rolls with water. Place in oven for 3-minutes; remove and brush tops again with water. Return to oven for 3-minutes; remove and brush tops again with water. Return to oven and bake for 15 additional minutes, or until tops are golden brown. Yield: 16 rolls.
