1 1/8 cup cold filtered water (warmed in microwave for 30-seconds)
3 Tablespoons packed brown sugar
1 Tablespoon unsweetened cocoa
1 Tablespoon vital gluten
1 Tablespoon olive oil
2 Tablespoons molasses
1 teaspoon Kosher salt
¾ teaspoon caraway seeds (optional)
2 cups (10-ounces) bread flour
1 cup (5-ounces) rye flour
2 teaspoons bread machine yeast

Place all ingredients, in the order lised into the pan of bread machine. Program the machine for dough cycle. Adjust the dough's consistency with additional flour or water, as necessary. Allow the machine to complete its cycle.

Remove dough from machine. Shape and place into a lightly oiled 9 x 5-inch loaf pan. Cover and let rise for 1 hour. Bake at 350° F for 45 minutes. Remove from oven and let cool before slicing. Yield: 1 1½ pound loaf.
