Tomato Basil Bread (Bread Machine)

1cup water
¼ cup Parmesan cheese, grated
3 Tablespoons tomato paste
1 Tablespoon sugar
1 Tablespoon dried basil
1 Tablespoon olive oil
1 teaspoon salt
1/8 teaspoon crushed red pepper flakes
2½ cups bread flour
2 teaspoons active dry yeast

Place all of the dough ingredients into the pan of bread machine in the order listed. Program the machine for the dough setting and press Start. Examine the dough about half way through the kneading cycle; it should be very tacky, but holding its shape somewhat. Adjust the dough's consistency with additional flour or water, as necessary. Allow the machine to complete the dough cycle.

Turn dough onto floured surface. Scale the dough into 2-ounce pieces. Fashion pieces into balls and place on parchment lined cookie sheets. Let rest several minutes; flatten with floured hand.

Turn on oven for exactly 1 minute 20 seconds. Turn off. Place rolls in warm oven until doubled in size, about 2 hours. Remove from oven.

Preheat oven to 375° F. Bake rolls 20 minutes. Yield: 12 rolls. NOTE: Use rolls for Bacon Turkey Bravo sandwich:
