Peanut Butter Rice Krispie Trees

4 Tablespoons (½ stick) unsalted butter
10 ounces mini-marshmallows
¾ cup creamy peanut butter
6 cups Rice Krispies
12 ounces chocolate candy coating (almond bark)
Red, white and green decorator frosting

Melt the butter over low heat in a large pot. Stir in marshmallows and cook until fully melted and no marshmallow white remains. Stir in the peanut butter until combined. Stir in the Rice Krispies, until evenly distributed through the marshmallow mixture. Pour into two lightly greased 8-inch round cake pans. Smooth out the top by moistening your hands with a little water and using the palms of your hand to press down gently. Do not press down too hard or the trees will be too dense. Set aside to cool.

Remove from pan; cut each round into 8 wedges. Insert a popsicle stick in the bottom of the wedge. Melt the chocolate candy coating in a saucepan. Thoroughly coat the trees with melted chocolate candy coating. Place on waxed paper to cool. When the chocolate candy coating has hardened, decorate the trees with decorator frosting to look like Christmas trees. Yield: 16 trees.
