Preheat oven to 375º F. Combine eggs, water, vanilla extract and margarine in a large mixing bowl; beat with electric mixer until well blended. Add sugars and beat until smooth and creamy. Add salt, baking powder, cinnamon, baking soda; beat with electric mixer until well blended. Add flour and beat until smooth. Fold in oats and pecans; mix well. Using a rounded tablespoon, shape into balls and place 3 inches apart on greased cookie sheets. Bake for 12 minutes or until golden brown. Remove immediately from pan and finish cooling on wire racks. Yield: 3 to 3½ dozen cookies. |
