Snickerdoodles

2 Tablespoons granulated sugar
2 teaspoons cinnamon
1 cup margarine, softened
1½ cups granulated sugar
2 eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
2¾ cups all purpose flour

Preheat oven to 400º F.

Combine 2 Tablespoons granulated sugar and 2 teaspoons cinnamon. Set aside.

Beat margarine, sugar and eggs until fluffy. Add cream of tartar, baking soda and salt; beat until well mixed. Stir in flour. Form into balls the size of small walnuts. Roll balls in sugar/cinnamon mixture. Place about 2 inches apart on an ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown. Remove from cookie sheet to a wire rack and cool completely. Yield: about 6 dozen.
