Three Chocolate Cookies

2 sticks unsalted salted butter, softened
½ cup vegetable shortening
¾ cup white sugar
1¾ cups light brown sugar, packed
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon vanilla extract
3 eggs
3¾ cups all purpose flour
1 (12 ounce) package semisweet chocolate chips
1 cup milk chocolate chips
3 ounces bittersweet chocolate, chopped (or 1 cup bittersweet chocolate chips)
1 package almond brickle chips
2 cups chopped pecans or walnuts

Preheat oven to 375° F.

In a mixing bowl, beat butter and shortening until light and creamy. Add sugars, salt and baking soda, and beat until creamy. Add vanilla and eggs; beat until light. Stir in flour; mix well. Stir in chocolate chips and nuts; mix well. Drop heaping tablespoon of dough on lightly greased cookie sheet (make 8 cookies per cookie sheet).

Bake at 375° F for 12 minutes, or until lightly browned. Remove from oven and cool 2 minutes on cookie sheet. Remove from cookie sheet and let cool completely on wire racks. Yield: 72 cookies.

*If using salted butter, add only ½ teaspoon salt
