Cheese Grits

½ cup Quaker quick grits
3 cups water
¾ teaspoon salt
4 ounces Velveeta cheese

Combine grits, water and salt in a large microwave dish with a lid. Place a paper towel on top of dish and cover with lid. Microwave on high for 10 minutes. Remove paper towel. Stir in cheese; if grits are too thick, add a little more water. Cover with lid and microwave on high for 7 minutes more. Stir.

Serve in a bowl or on a plate. Top with crumbled bacon. Cover a piece of toast with grits and eat. Bon appetite! Yield: 2 servings.

NOTE: For one serving, use 1/3 cup grits, 2 cups water, salt to taste (try ¼ teaspoon) and 3 ounces Velveeta cheese. Cook as above.
