Orange Yogurt

1 quart plain yogurt (not fat free)
½ cup freshly squeezed orange juice
3 Tablespoons honey
2 teaspoons vanilla extract

Line a sieve or strainer with cheesecloth or paper towels and suspend it over a bowl. Pour the yogurt into the sieve and allow it to drain, refrigerated, for 3 hours or overnight. (It should give off around 1½ cups of liquid.) Wash and dry yogurt carton for later use.

Place the orange juice, honey and vanilla extract on a jar with a top. Shake vigorously to combine all ingredients. Set aside.

Place the thickened yogurt into a medium bowl and stir in orange mixture. Whisk until well blended. Pour back into original carton. Refrigerate until ready to use. Yield: 3 cups.
