Broiled Grouper Parmesan

½ cup grated Parmesan cheese
¼ cup unsalted butter, room temperature
3 Tablespoons mayonnaise
1 dash Tabasco sauce
Salt and pepper to taste
2 pounds fresh grouper fillets
2 Tablespoons fresh lemon juice
¼ teaspoon Essence

Preheat oven's broiler

In a small bowl, stir together Parmesan cheese, butter, mayonnaise, Tabasco sauce, salt and pepper. Set aside.

Place the grouper fillets on a greased baking tray. Brush the fillets with lemon juice; sprinkle on Essence. Broil the fillets for 4 to 6 minutes, or until they can be flaked with a fork. Remove from oven and spread cheese mixture on top of fillets. Return to the broiler for 1 to 2 minutes, or until the topping is browned and bubbly. Yield: 4 servings.
