Fried Shrimp with Tartar Sauce

2 pounds medium-size fresh shrimp, peeled and deveined
1 cup all purpose flour
1 teaspoon baking powder
½ teaspoon salt
2/3 cup water
2 Tablespoons lemon juice
1 Tablespoon vegetable oil
1 egg, beaten
Vegetable oil for frying
Tartar sauce (recipe below)

Combine flour, baking powder and salt in a medium bowl; make a well in the center. Combine water, lemon juice, 1 Tablespoon vegetable oil and egg; add to dry ingredients and stir until batter is smooth. Dip shrimp in batter, and fry in hot oil (375º F) until brown. Serve with Tartar Sauce. Yield: 4 servings.

Tartar Sauce
2/3 cup mayonnaise
2 Tablespoons sweet pickle relish
1 Tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 Tablespoon capers, drained
1 Tablespoon grated onion
1 Tablespoon lemon juice
Dash of hot sauce

Combine all ingredients, stirring well. Cover and chill several hours before serving. Yield: 1 cup.
