Stir Fry Shrimp with Snow Peas

¾ cup chicken broth
1 Tablespoon cornstarch
¼ cup teriyaki sauce
2 Tablespoons peanut oil
1 (10-ounce) package frozen snow peas, thawed and patted dry
½ cup sliced green onions
1½ pounds fresh head-on shrimp, deheaded, shelled and deveined
Cooked white rice

Mix chicken broth, cornstarch and teriyaki sauce; set aside. In a large wok, heat peanut oil over medium high heat. Add shrimp and cook, stirring constantly, for 3 to 4 minutes or until shrimp is pink and firm. Add snow peas and cook 1 additional minute, stirring constantly. Add green onions and cook 2 more minutes, stirring constantly. Add chicken broth mixture; heat until bubbly and thickened. Serve over rice. Yield: 4 servings.
