Chris's Steak Diane

3 teaspoons Bisto
½ cup cold water
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
2 teaspoons soy sauce
2 cups chopped onion (1 large)
1 cup sliced fresh mushrooms
2 Tablespoons unsalted butter, divided
2 small tenderloin steaks (4 to 5 ounces each), sliced thin
3 Tablespoons Madeira
4 Tablespoons Cognac

In a small bowl, mix together first five ingredients. Set aside.

Melt 1 Tablespoon butter in a 12-inch skillet over medium heat. Add the steak and cook turning frequently, 2 to 3 minutes or just until cooked through. Remove steak to a plate. In the same skillet, melt remaining 1 Tablespoon of butter. Sauté onions and mushrooms over medium heat until tender, about 5 minutes. Return the steak to the pan with the onions and mushrooms. Add Bisto mixture and Madeira, stirring constantly until thickened and bubbly. Add Cognac and ignite with match. When flames die down, serve. Yield: 2 servings.
