17.5 ounces (500 grams) pork butt, cut into 1-inch pieces
½ cup dried breadcrumbs
1 teaspoon Kosher salt
½ teaspoon freshly ground pepper
2 Tablespoons fresh sage, chopped (or 1 teaspoon dried sage)
Pinch of nutmeg
Pinch of mace
1/3 cup water

Partially freeze pork by placing it in the freezer for about 30 minutes.

Place pork pieces in food processor fitted with steel blade. Process for about 20 seconds, or until pork is finely ground.

Add bread crumbs, salt pepper, sage, nutmeg, mace and water to the pork. Process for about 30 seconds or until all ingredients are well combined. Microwave a small piece of sausage for about 30 seconds; correct seasonings.  Yield:  About 20 ounces of sausage.
