Baked Ziti

Susan's Tomato Sauce:
1 medium onion, finely chopped
6 cloves garlic
2 Tablespoons olive oil
2 (28-ounce) cans petite diced tomatoes
1 (28-ounce) can crushed tomatoes
½ cup water
4 Tablespoons Italian seasoning
1 Tablespoon brown sugar
Salt and pepper to taste

Filling:
1 pound dry ziti pasta
1 pound sweet Italian turkey sausage
6 ounces Provolone cheese, sliced
1½ cups sour cream
6 ounces mozzarella cheese, shredded
2 Tablespoons grated Parmesan cheese

Susan's Tomato Sauce: Heat olive oil over medium heat in a large Dutch oven. Add onion and garlic; sauté for 5 minutes, or until onion is softened. Add petite diced tomatoes, crushed tomatoes, water and Italian seasoning. Bring to a boil. Reduce heat to medium low and simmer for 30 to 45 minutes, or until mixture is thickened. Purée with an immersion blender. Yield: 2½ quarts.

Baked Ziti: Bring a large pot of lightly salted water to a boil. Add ziti pasta; cook until al dente, about 8 minutes. Drain; set aside.

Remove turkey sausage from casings and crumble into large skillet. Brown over medium heat. Add 2 quarts of Susan's Tomato Sauce. Simmer, uncovered for 30 minutes.

Preheat oven to 350° F. Spray a 9 x 13 inch baking dish with non-stick spray. Layer as follows: ½ of the ziti, ½ of the sauce mixture, Provo lone cheese, sour cream, remaining ziti, remaining sauce mixture, and mozzarella cheese. Top with grated Parmesan cheese. Note: The pan will be very full.

Place on a baking pan; bake uncovered for 30 minutes in the preheated oven, or until the cheeses are melted and the mixture is bubbly. Yield: 8 servings.
