Grilled Honey-Ginger Marinated Chicken

½ cup soy sauce
½ cup honey
1 Tablespoon cider vinegar
2 Tablespoons grated fresh ginger
5 cloves garlic, minced
1 teaspoon Essence or Creole Seasoning
6 chicken breasts, skinned, boned and trimmed of all fat

Process first 6 ingredients in a jar or other covered container. Shake well to mix thoroughly. Reserve ¼ cup of marinade; refrigerate.

Place chicken in a shallow dish or a ziploc bag. Pour remaining marinade over chicken. Cover or seal, and chill at least two hours, turning chicken occasionally.

Remove chicken from marinade, discarding marinade. Grill chicken over hot coals for 20 minutes or until tender, basting chicken frequently with reserved marinade. Alternatively, broil 7 inches from heat for 11 to 12 minutes on each side or until tender basting chicken frequently with reserved marinade. Yield: 6 servings.
