Imperial Chicken Bake

½ cup dry breadcrumbs
¼ cup plus 2 Tablespoons freshly grated Parmesan cheese
1½ Tablespoons minced fresh parsley
½ teaspoon salt
1/8 teaspoon freshly ground pepper
6 chicken breasts, skinned, boned and trimmed of all fat
¼ cup milk
¼ cup unsalted butter, melted
1 small clove garlic, minced
Juice of 1 lemon
Paprika

Preheat oven to 350º F.

Combine first 5 ingredients. Dip each chicken breast in milk and dredge in breadcrumb mixture. Arrange on a lightly greased 9 x 13-inch baking pan.

Combine butter, garlic and lemon juice. Drizzle over chicken. Sprinkle with paprika. Bake at 350º F for 40 minutes or until tender. Yield: 6 servings.
