Indonesian Ginger Chicken

1 cup honey
¾ cup soy sauce
¼ cup minced garlic (8 to 10 cloves)
½ cup peeled and grated fresh ginger root
6 chicken breasts, skinned, boned and trimmed of all fat.

Cook the honey, soy sauce, garlic and ginger root in a small saucepan over low heat until the honey is melted. Remove from heat. Cool to room temperature.

Place chicken breasts in a zip lock bag. Pour honey marinade into bag. Seal bag and make sure that chicken is completely coated. Marinate overnight in the refrigerator.

Preheat oven to 350° F.

Place in a single layer on shallow baking pan. Pour on marinade. Cover with aluminum foil. Bake for 30 minutes. Remove the foil and turn the chicken. Raise the temperature to 375° F. Continue baking for 30 minutes, or until the chicken is done. Serve hot, at room temperature, or cold. Yield: 6 servings.
