Turkey Meat Loaf

1 large onion, chopped
1 Tablespoon olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
¼ teaspoon dried thyme
3 Tablespoons Worcestershire sauce
6 Tablespoons chicken stock
1 teaspoon tomato paste
2½ pounds ground turkey breast
¾ cup plain dry bread crumbs
2 eggs, beaten
¼ cup ketchup

Preheat oven to 325° F.

In a medium sauté pan, on medium-low heat, cook the onions, olive oil, salt, pepper and thyme until the onions are translucent but not browned, about 15 minutes. Add the Worcestershire sauce, chicken stock and tomato paste; mix well. Remove from heat and allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs and onion mixture in a large bowl. Mix well and shape into two rectangular loaves. (Note: Can be made in advance up to this point and frozen for later use). Spread ketchup evenly on top. Bake for 1½ hours, until the internal temperature is 160° F and the meat loaf is cooked through. Serve hot, at room temperature, or cold in a sandwich. Yield: 6 servings.
