Combine eggs, sugar, lemon juice and margarine in top of a double boiler; beat well. Drain pineapple, reserving the juice. Add 1 Tablespoon reserved pineapple juice to egg mixture. Cook over boiling water 7 minutes or until very thick, stirring constantly; cool. In a large bowl, add cook whip, sour cream and egg mixture; mix well. Fold in pineapple, marshmallows, mandarin oranges, strawberries and banana slices. Chill thoroughly overnight. To serve, garnish with marshmallows and whole strawberries. Yield: 6 to 8 servings. |
