Delicious Fruit Salad

2 eggs, slightly beaten
2 Tablespoons granulated sugar
3 Tablespoons lemon juice
1 Tablespoon margarine, melted
1 (8¼-ounce) can crushed pineapple, drained
1 (12-ounce) container cool whip
½ cup sour cream
1 cup miniature marshmallows
2 (11-ounce) cans mandarin oranges, drained
1 cup fresh strawberries, sliced
1 large banana, sliced
Additional marshmallows and whole strawberries for garnish

Combine eggs, sugar, lemon juice and margarine in top of a double boiler; beat well. Drain pineapple, reserving the juice. Add 1 Tablespoon reserved pineapple juice to egg mixture. Cook over boiling water 7 minutes or until very thick, stirring constantly; cool.

In a large bowl, add cook whip, sour cream and egg mixture; mix well. Fold in pineapple, marshmallows, mandarin oranges, strawberries and banana slices. Chill thoroughly overnight. To serve, garnish with marshmallows and whole strawberries. Yield: 6 to 8 servings.
