4 medium russet potatoes (2 pounds)
½ cup unsalted butter, melted
Salt and freshly ground pepper to taste

Preheat oven to 375° F. Line a large baking sheet with sides with Release or aluminum foil. If using aluminum foil, spray with non-stick spray.

Peel potatoes; slice 1/8 to 1/4 inch thick. Rinse in cold water; drain and pat dry.

Place potatoes in a large mixing bowl. Pour butter over potatoes; stir with wooden spoon to thoroughly coat.

Arrange potatoes in a single layer on prepared baking sheet. Drizzle on remaining butter from mixing bowl. Sprinkle potatoes with salt and freshly ground pepper. Bake at 375° F for 30 minutes. Remove pan from oven, and turn potatoes. Return to oven and bake for an additional 30 minutes. With a slotted spoon, transfer potatoes to serving bowl; serve immediately. Yield: 4 to 6 servings.
