Broccoli Casserole

1 (16 ounce) package frozen broccoli florets
2 teaspoons salt
2 cans cream of mushroom soup, undiluted
1 small jar Cheeze Whiz, or 8 ounces Velvetta Cheese
1 cup minute rice
½ cup shredded cheddar cheese
¼ cup plain dry bread crumbs
2 teaspoons margarine or butter

In a large saucepan, bring water and 2 teaspoons salt to a boil; add broccoli. When the water returns to a boil, remove from heat and pour broccoli in colander. Drain well; set aside.

Preheat oven to 350º F.

Heat cream of mushroom soup and Cheeze Whiz in a large saucepan until cheese melts. Add broccoli and rice. Mix well; pour into a greased casserole dish. Sprinkle cheese and breadcrumbs on top; dot with 2 teaspoons margarine or butter. (Note: May be prepared in advance up to this point). Bake at 350º F for 25 to 30 minutes, or until bubbly. Yield: 6 servings.

Variation: Add 2 cups cubed, cooked chicken for a complete meal.
