Microwave Baked Potatoes

1 large baking potato

Wash and trim off bad spots of one large baking potato. Make a cut approximately ¼- inch deep on the long side. Wrap in Saran Wrap. Microwave on high for 8 minutes. Test for doneness by pressing softly on the sides of the potato. If it is done, it will feel soft. If not done, microwave another minute or so. To microwave more than one potato, prepare as for one, and microwave for 6 minutes per potato, i.e., for two potatoes, microwave for 12 minutes. Serve with butter.

For variation, slice cooked potato and top with 2 scoops of butter, a large handful of shredded mild cheddar cheese and one Tablespoon of bacon bits.
