New Potatoes in Herbed Shallot Butter

1 pound small new potatoes, peeled
1 Tablespoon unsalted butter
¼ cup finely chopped shallots
1 clove garlic, minced
1 teaspoon chopped fresh chives or ½ teaspoon dried
1 teaspoon chopped fresh parsley or ½ teaspoon dried
¼ teaspoon salt
Freshly ground pepper

Steam the potatoes until just tender, about 20 minutes.

Melt the butter in a large skilled. Add the shallots and garlic and sauté over low heat until softened, about 5 minutes. Add the cooked potatoes to the skilled and stir well. Season with chives, parsley, salt and pepper and cook, stirring, until the potatoes are heated through, about 10 minutes. Yield: 4 servings.
