Steam the potatoes until just tender, about 20 minutes. Melt the butter in a large skilled. Add the shallots and garlic and sauté over low heat until softened, about 5 minutes. Add the cooked potatoes to the skilled and stir well. Season with chives, parsley, salt and pepper and cook, stirring, until the potatoes are heated through, about 10 minutes. Yield: 4 servings. |
