Parmesan Roasted Potatoes

1 pound Baby Dutch Yellow Potatoes
1 Tablespoon olive oil
4 Tablespoons freshly grated Parmesan cheese
Salt and freshly ground pepper to taste
Fresh chopped parsley, for garnish

Preheat oven to 375 ° F.

Boil the potatoes, unpeeled, in a large pot of water for 4 to 5 minutes. Drain and let cool.

Slice potatoes into quarters (or halves if small). Combine with olive oil, Parmesan cheese, salt and pepper. Mix thoroughly and place in a single layer on a baking dish that has been lined with aluminum foil and sprayed with non-stick spray. Place in oven and roast for 20 to 25 minutes. Remove from oven; correct seasonings. Yield: 4 to 6 servings.
