Cook spinach in olive oil until wilted.

Add Boursin cheese; cook until melted, about a minute. Remove from heat and cool.

Cut slits in chicken breasts, making sure not to cut all the way through.

Add spinach mixture to slits in chicken breasts.

Transfer to rimmed baking sheet; sprinkle with salt and pepper. Cover with aluminum foil and bake at 400°F for 20 minutes.

Remove from oven; sprinkle with Gruyère cheese. Return to oven for 5 minutes or until cheese melts.
