Add butter, salt, pepper and grits to boiling water. Stir to combine.
Cook grits over medium-low heat 25 minutes, stirring occasionally.
Add cheese; stir until melted. Cook 5 more minutes. Grits will be thick.
Pour grits onto quarter sheet pan; smooth out. Cover and refrigerate overnight.
Cut chilled grits into 20 2-inch rounds. Transfer to baking sheet.
Brush grits rounds with melted butter. Bake at 350°F for 30 to 35 minutes.
