Add ground beef to large skillet over medium heat.

Brown and crumble ground beef.

Drain ground beef in colander. Rinse well with hot water.

Return ground beef to skillet.  Add taco seasoning, Rotel Tomatoes and water. Cook until most of liquid has evaporated.

Add Velveeta cheese; cook until cheese has melted.

Transfer taco meat to casserole dish.

Top with shredded cheese, Fritos and more cheese. Bake at 350°F for 30 minutes.

Remove from oven. Top with shredded lettuce, tomatoes, green onion tops and jalapeños. Drizzle with sour cream.
