  • 1 cup (6 ounces, 170 grams) white chocolate chips
  • ½ cup (3 ounces, 85 grams) bitter-sweet or semi-sweet chocolate chips
  • ½ cup (4.75 ounces, 135 grams) creamy peanut butter (See Tip 1)
  • 1 Tablespoon (0.5 ounces, 14 grams) coconut oil or solid shortening (See Tip 2)

  • Line a mini-muffin pan with paper liners. Set aside.
  • Combine all ingredients in a microwave-safe bowl. Microwave on 50% power in 30-second increments, stirring after each 30-second increment until smooth. (See Tip 3)
  • Pour into mini-muffin paper liners. If desired, add decorations. Refrigerate to allow the candy to harden. (See Tip 4)
  • Store in an airtight container in the refrigerator or cool place.
  • Yield: About 24 pieces.

  1. Do not use reduced-fat or generic brands of peanut butter.
  2. Do not use unrefined coconut oil. Unrefined coconut oil has a coconut taste to it. Refined coconut oil does not have a coconut taste.
  3. I like to use a large glass measuring cup to melt the ingredients. The reason is that the spout on the measuring cup makes it easier to pour the liquid ingredients.
  4. I prefer using a piping bag to fill the mini muffin cups. However, you could also use a spoon.
