- 2 cups (8 ounces) pecan halves
- 1 egg white
- ½ Tablespoon vanilla extract
- ½ cup (3.5 ounces) granulated sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Preheat oven to 250°F. Line a large baking sheet with non-stick aluminum foil. (See Tip 1)
In a medium mixing bowl, beat the egg white until frothy. Add the vanilla extract, sugar, cinnamon, and salt; beat until the mixture thickens. Fold pecan halves into egg white mixture with a wooden spoon until well coated.
Spread coated pecans on a single layer on the prepared baking sheet. Bake until the coating is perfectly dry, about one hour and 15 minutes. Yield: 2½ cups.
