Irish Nachos

Irish Nachos are the perfect appetizer for St. Patrick's Day. Kettle potato chips are loaded with two cheeses, bacon, tomatoes, sour cream, and green onions.

Ingredients

  • 5 cups (5 ounces) kettle potato chips
  • ¾ cup (3 ounces) shredded Dubliner cheese (See Note 1)
  • ¾ cup (3 ounces) shredded Cheddar cheese
  • ¼ cup crumbled bacon (See Note 2)
  • 1 small tomato, cored, seeded, and diced, about ¼ cup
  • cup light sour cream
  • 2 green onions, tops only sliced

Instructions

  • Preheat oven to 375° F.
  • Spread potato chips in an oven safe container. Sprinkle with cheeses. Bake in preheated oven for 10 minutes, or until cheeses have melted and are bubbly.
  • Remove from oven. Sprinkle on crumbled bacon and diced tomatoes. Top with sour cream. Finish with a sprinkling of green onions.
  • Yield: 6 servings.

Notes

  1. May use 1 ½ cups of cheddar cheese in place of ¾ cup of Dubliner cheese and ¾ cup of cheddar cheese.
  2. I used 8 slices of bacon to produce ¼ cup of crumbled bacon.
