Tortilla Pizza

Tortilla Pizza with its thin and crispy crust has all of the great taste of homemade pizza but without the fuss. It's the perfect size for an individual serving and takes less than 15 minutes to make from start to finish.

Ingredients

Homemade Pizza Sauce (See Tip 1)

  • 1 (28-ounce, 794 grams) can whole peeled tomatoes, drained
  • 2 cloves garlic minced
  • 1 Tablespoon olive oil
  • 1 teaspoon red or white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Tortilla Pizza

  • 8 inch flour tortilla (See Tip 2)
  • ½ tablespoon olive oil, divided
  • 3 Tablespoons pizza sauce
  • 1 ½ Tablespoons grated Parmesan cheese
  • ½ cup (2 ounces, 57 grams) shredded mozzarella cheese (See Tip 3)
  • teaspoon dried oregano

Instructions

Homemade Pizza Sauce

  • Place drained tomatoes in bowl of food processor fitted with steel blade. Add garlic, olive oil, vinegar, and oregano; process until smooth, about 30 seconds. Season to taste with salt and freshly ground black pepper. (See Tip 4)Yield: 2 cups.

Tortilla Pizza

  • Preheat oven to 425° F.
  • Place tortilla in cast iron skillet set over medium heat. Brush both sides with olive oil, reserving ⅛ teaspoon for drizzling on finished pizza. Heat both sides until golden brown, 2 to 3 minutes per side.
  • Top tortilla with pizza sauce, Parmesan cheese and mozzarella cheese. Transfer skillet to preheated oven; bake until the edge of the pizza is golden brown and the cheese is melted, 7 to 8 minutes.
  • Remove skillet from oven; transfer pizza to cutting board. Drizzle reserved olive oil over the top and sprinkle with dried oregano. Cut into 4 wedges and serve.
  • Yield: 1 8-inch trotilla pizza.

Notes

  1. You can use store-bought pizza sauce instead of making your own. However the homemade pizza sauce is amazing! Don't use marinara sauce in place of the pizza sauce. It won't taste the same.
  2. Not all flour tortillas are the same. Some are thicker than others. Try to find the thinnest flour tortilla possible. The thicker the tortilla, the less crispy the finished pizza. I used the Mission soft flour tortillas.
  3. Avoid using pre-shredded mozzarella cheese. It's coated with cellulose that impacts not only the flavor but also the melting ability. Therefore, go the extra step and shred your own. Also, try to use whole milk mozzarella cheese.
  4. The homemade pizza sauce can be refrigerated for up to 1 week, or frozen for up to 1 month.
