Lazy Enchiladas
Lazy Enchiladas are a popular twist on a more traditional enchilada recipe. Lazy Enchiladas use three store-bought ingredients, take minutes to put together and are ready to serve in less than 30 minutes. They are sure to become a family favorite on those nights where you want a quick and amazingly delicious meal.

- 12 to 18 count package large frozen taquitos (See Tip 1)
- 2 cups canned enchilada sauce (See Tip 2)
- 2 cups (8-ounces) Mexican blend shredded cheese
Preheat oven to 400°F. Spray a 9 x 13-inch baking dish with vegetable oil spray.
Spread frozen taquitos in a single layer in the baking dish. Spray lightly with vegetable oil spray. Bake uncovered in preheated 400°F oven for 10 minutes or until lightly golden brown. (See Tip 3)
Remove taquitos from oven. Pour enchilada sauce over taquitos and sprinkle on shredded cheese. Return uncovered to the 400°F oven for 10 to 12 minutes or until the enchilada sauce is bubbly and the cheese is melted.
Allow to cool for several minutes. Serve with your favorite condiments such as shredded lettuce, diced tomatoes, chopped green onion tops, sliced black olives, sour cream, etc.
Yield: 4 servings.
- Use your favorite frozen taquitos in this recipe. I used chicken and cheese.
- My favorite canned enchilada sauce to use in this recipe is Las Palmas Green Chile Enchilada sauce. However, use whatever canned enchilada sauce you like. Alternatively use home-made. Use any leftover enchilada sauce for another purpose.
- Frozen taquitos come in different quantities. Feel free to use the entire package or however many you want.
