Disney-Inspired Grilled Three-Cheese Sandwich

Ingredients

For the Cream Cheese Spread

  • 4 oz Cream Cheese room temperature
  • 2 oz Trader Joe's Unexpected Cheddar Cheese, shredded see notes
  • 2 tbs Heavy Whipping Cream
  • ¼ tsp Kosher Salt

For Garlic-Mayo Spread

  • ½ c Mayonnaise
  • 3 cloves Garlic minced
  • ¼ tsp Kosher Salt

For the Grilled Three-Cheese Sandwich

  • 8 slices Artisan White Bread
  • 8 slices Provolone Cheese
  • 8 slices Cheddar Cheese

Instructions

To Make Cream Cheese Spread

  • Cube the room-temperature cream cheese and place it in a small food processor. Then add the shredded Unexpected Cheddar cheese, heavy whipping cream, and ¼ tsp kosher salt. Place the lid on the food processor and blend until smooth. Set said until ready to use.

To Make the Garlic-Mayo Spread

  • Place the mayonnaise in a small bowl. Add the minced garlic and ¼ tsp Kosher salt. Then, use an electric hand mixer to combine.

To Make the Grilled Three-Cheese Sandwiches

  • Preheat oven to 425°F.
  • Place four slices of artisan white bread on a large cutting board or flat surface. Spread one tablespoon of the garlic-mayo spread on one side of each piece of bread.
  • Line a large rimmed baking sheet with parchment paper. Place the prepared bread slices, with the garlic-mayo spread side face down on the baking sheet.
  • Top each slice of bread with two slices of provolone cheese. Carefully spread 2-3 tablespoons of the cream cheese spread over the provolone cheese slices. Place two slices of cheddar cheese on top of each piece of bread.
  • Spread one tablespoon of the garlic-mayo spread on one side of each of the four remaining pieces of bread. Then place the slices of bread, with the mayo side facing out, to top off the sandwiches.
  • Place the sheet pan in the 425°F oven for 20 minutes. After 20 minutes, take the pan out of the oven and carefully flip the sandwiches over. Return to the oven and bake for 20 more minutes.
  • Remove the pan from the oven. If the cheese has oozed out of the sandwiches, immediately and carefully pull the pieces of bread apart, and using a knife, scrape the cheese off the parchment and transfer it back to the sandwich. Then, replace the top piece of bread. You should do this one sandwich at a time. Allow the sandwiches to cool on a wire rack for a few minutes before serving.

Notes

The original recipe calls for Double Gloucester, but that is difficult to find. I substituted it for Trader Joe's Unexpected Cheddar Cheese. If you can't find that, you can use regular cheddar cheese.
