Easy 3-Ingredient Slow Cooker Coca-Cola Pulled Pork

Equipment

  • 5 or 6 qt. Slow Cooker
  • whisk
  • colander
  • 4-cup measuring cup

Ingredients

  • 3.5 lbs Bone-In Pork Butt
  • 18 oz Barbecue Sauce1
  • 12 oz Coca-Cola2

Instructions

  • Whisk together the entire bottle of barbecue sauce and Coca-Cola in a slow cooker. Add the pork butt, making sure it is fully submerged in the liquid. Heat on high for 5 to 6 hours, until the pork is tender and falling apart.3
  • Once the pork is tender and falling apart, use tongs to transfer it to a large bowl or dish. Remove the bone and cover the dish with aluminum foil to let the meat rest for about 20 minutes before shredding.
  • While the pork is resting, strain the liquid from the slow cooker into a colander set in a large measuring cup, to remove any "bits." Skim as much fat as you can from the strained liquid and transfer it to a wide saucepan. Bring to a boil over high heat, then reduce the heat to medium and continue to simmer for about 20 minutes, until reduced by half.
  • Put on a pair of vinyl gloves and use your hands to shred the pork, taking care to remove pieces of fat. Ladle about ½ cup of the reduced sauce into the pork. Use a pair of tongs to mix the sauce into the pulled pork. Serve with additional remaining sauce on the side.
  • Yield 10-12 servings

Notes

  1. I used Sweet Baby Ray Honey Barbecue Sauce.
  2. Do not use diet soda.
  3. Resist the urge to check on it! Every time you remove the lid, it adds 15-20 minutes more to the cooking time.
