Easy Caesar Salad Dressing Without Raw Egg

Ingredients

  • cups (12 ounces, 340 grams) mayonnaise
  • 2 teaspoons Dijon mustard
  • 3 cloves garlic, minced
  • 2 ounce can of anchovy fillets, drained and rinsed (See Tip 1)
  • 3 Tablespoons (1.5 ounces) freshly squeezed lemon juice
  • 2 teaspoons Worcestershire sauce
  • 6 Tablespoons (0.75 ounces, 21 grams)freshly grated Parmesan cheese
  • 2 to 4 Tablespoons of water to thin, if desired
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Place all dressing ingredients in a blender. Blend until smooth, about 10 to 20 seconds. Cover and refrigerate until ready to use.
  • Yield: 2 cups.

Notes

  1. In general, 3 anchovy fillets should be used. However, if you're not a fan of anchovies, you can reduce the amount or substitute Worcestershire sauce. If you're a fan of anchovies, feel free to use the whole can.
