Garlic Parmesan Roasted Green Beans
Garlic Parmesan Roasted Green Beans are made by roasting fresh green beans at high heat until nearly tender, then adding fresh minced garlic, and finishing with Parmesan cheese.

- 1 pound fresh green beans, trimmed and dried well (See Tip 1)
- 2 tablespoons olive oil, divided
- ¾ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
- 3 cloves garlic, finely minced
- ¼ cup (1 ounce) freshly grated Parmesan cheese (See Tip 2)
- ½ teaspoon fresh lemon juice (optional)
Preheat oven to 425°F. Line a half-sheet pan with nonstick aluminum foil. Place the pan in the oven to preheat for 5 to 10 minutes. (See Tip 3)
Add the green beans to a medium to large bowl. Toss with 1 ½ tablespoons of olive oil, ¾ teaspoon of Kosher salt, and ½ teaspoon of freshly ground black pepper.
Spread the green beans in a single layer on the prepared pan (See Tip 4)
Roast the green beans for 10 to 15 minutes in the preheated 425°F oven.
In a small bowl, toss the minced garlic with the remaining ½ tablespoon of olive oil.
Remove the green beans from the oven. Sprinkle with the minced garlic tossed in olive oil. Toss quickly, then return to the oven for an additional 5 minutes, or until the edges are slightly blistered and the beans are tender but still have a little snap.
Remove the pan from the oven and immediately sprinkle the Parmesan cheese over the hot beans. Toss lightly so that the Parmesan cheese meits and clings to the beans.
If desired, add a light squeeze of lemon juice just before serving.
Yield: 4 to 6 servings.
- Keep the beans whole, and trim just the stem end.
- Use freshly grated Parmesan cheese for the best melt and texture.
- The reason for preheating the pan is to give the beans a jump-start to roasting.
- It's important to spread the beans in a single non-overlapping layer so that they properly roast. If necessary, use two sheet pans.
