Swamp Dip
- 1 Tablespoon olive oil
- ½ cup diced onion (½ medium onion)
- 1 jalapeño pepper, cored, seeded, and chopped
- 2 cloves garlic, minced
- 15 ounce can black beans, rinsed and well drained
- 2 Tablespoons Salsa Verde
- Juice of one lime, about 1 ½ tablespoons
- ¼ teaspoon ground cumin
- ¼ teaspoon fine sea salt salt
Ghost Crackers
- 4 10-inch flour tortillas (See Tip 1)
- 2 ½ inch ghost cookie cutters (See Tip 2)
- #5 round pastry tip for the ghosts’ eyes
- #18 round pastry tip for the ghosts’ mouth
Swamp Dip
Heat olive oil in a medium skillet over medium heat. Add the onions and jalapeño peppers; cook until they soften, about 7 minutes. Add the garlic; cook until fragrant, about 30 seconds. Allow to cool for 15 minutes.
Add the black beans, onion mixture, Salsa Verde, lime juice, cumin, and salt to a food processor with a steel blade. Process until smooth, scraping down the sides as necessary, for about 30 seconds. Transfer to a bowl; cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Yield: 1 ½ cups
Ghost Crackewr
Preheat the oven to 400°F. Line a half-sheet pan with parchment paper
Cut ghost shapes from the flour tortillas. Use the #5 round tip to cut two eyes and the #18 round tip to cut the mouth for each ghost.
Place the ghosts on the prepared sheet pan. Cover with another piece of parchment paper and another half sheet pan (to serve as a weight on the ghosts). (See Tip 3)
Bake in a preheated 400°F oven for 15 to 20 minutes, or until crisp and lightly browned around the edges.
Yield: 36 to 40 ghost crackers.
- I used 10-inch Walmart Brand flour tortillas. Feel free to use smaller flour tortillas.
- The ghost cookie cutters should produce ghost crackers that are substantial enough to work with the Swamp Dip.
- Don't skip this step - it keeps the Ghost Crackers from puffing up and curling.
