Preheat the oven to 350°F. Line two half-sheet pans with parchment paper. Put on a pair of vinyl gloves.
Take one piece of each kind of cookie dough and press them together. Then, gently roll the dough into a ball between your hands. Press the ball into a disk, making sure the line between the two dough pieces runs down the center. Place eight disks on one of the prepared pans.
Press five chocolate chips into the tops of each piece of dough. Bake at 350°F oven for 15 minutes. (See Notes 1, 2, and 3)
Repeat, making the remaining dough pieces and placing them on the other prepared pan.
Remove the first pan from the oven and allow the cookies to cool on the pan for 10 minutes. Bake the second pan. (See Note 4)
After 10 minutes cooling, transfer the cookies to a wire cooling rack. Once cooled, store in an airtight container.
Yield: 12 cookies
Tips/Notes
The additional chocolate chips on top make the brookies look more attractive.
Because rich doughs spread quickly, keep them in the refrigerator until you're ready to assemble. If your kitchen is warm or the dough softens, chill the assembled brookie balls on the baking sheet for 10–15 minutes before baking to keep them thick and soft.
Pull the tray when the chocolate chip cookie edges are light golden brown, and the brownie portion looks set on top, even if the center feels slightly soft. They will continue to set on the hot pan as they cool.
If any brookies spread unevenly in the oven, place a large circular cutter or wide glass over the hot cookie immediately after baking and gently swirl it in a circle to nudge it into a perfect round while it's still pliable.
