Quick & Easy No-Bake Chocolate Oat Bites

Equipment

  • 24-well mini muffin pan
  • mini cupcake liners
  • large microwave proof bowl
  • Silicone Spatula
  • large kitchen knife
  • cutting board
  • small ice cream scoop

Ingredients

  • ½ c Creamy Peanut Butter (See Note 1)
  • ¼ c Coconut Oil (See Note 2)
  • ¼ c Honey
  • 1 ½ c Old Fashioned Oats (See Note 3)
  • ¼ c Unsweetened Coconut Flakes (See Note 4)
  • ½ c Mini Semi-Sweet Chocolate Chips
  • ¼ c Craisins chopped

Instructions

  • Place 24 cupcake liners in a 24-well mini muffin pan, then set it aside until ready to use.
  • Place the peanut butter, coconut oil, and honey in a large microwave-proof bowl. Then, heat the bowl in 30-second increments, stirring after each heating, until everything is melted and well combined. This should take about a minute.
  • Add the old-fashioned oats and stir until they are well combined with the liquid.
  • Then, stir in the unsweetened coconut flakes until well combined.
  • Add the mini semi-sweet chocolate chips and stir until they are completely melted.
  • Coarsely chop the Craisins and stir them into the mixture well.
  • Use a small ice cream scoop and divide the mixture evenly into the wells of the prepared pan. Place the pan in the refrigerator for at least half an hour to allow the mixture to harden. Remove the Quick & Easy No-Bake Chocolate Oat Bites from the pan and store them in an airtight container in the refrigerator.
  • Yield 24 bites

Notes

  1. May substitute chunky peanut butter. However, avoid using natural peanut butter becasue it's too oily.
  2. May substitute unsalted butter for the coconut oil. However, avoid the use of vegetable oil.
  3. It's best not to substitute quick oats for the old-fashioned oats. The quick oats are processed more than old-fashioned oats and will negatively impact the texture of the oat bites.
  4. Sweetened coconut flakes should be avoided because of the added sweetness that they provide.
