Easy Mini Halloween Pizzas

Mini Halloween Pizzas will delight your friends and family, young and old. They're easy and fun to make with flour tortillas for the crust and decorations made with sliced cheeses and black olives.

Ingredients

Pizza Sauce (See Tip 1)

  • 28 ounce can whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 Tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and fpreshly ground black pepper to taste

Mini Halloween Pizzas

  • 3 10-inch flour tortillas (See Tip 2)
  • 2 teaspoons olive oil
  • 4 slices Mozzarella cheese
  • 1 slice Cheddar cheese
  • 4 large black olives
  • ¼ cup pizza sauce
  • 2 Tablespoons shredded mozzarella cheese

Instructions

Pizza Sauce

  • Place drained tomatoes in bowl of food processor fitted with steel blade. Add garlic, olive oil, vinegar, and oregano; process until smooth, about 30 seconds. Season to taste with salt and freshly ground black pepper. Yield: 2 cups.

Mini Halloween Pizzas

  • Preheat oven to 400°F. Line a large rimmed baking sheet with non-stick aluminum foil. Set aside.
  • Cut six 4 ½ to 5-inch circles from flour tortillas. Brush both sides with olive oil. Cook in skillet over medium heat until golden brown on both sides, abut 2 to 3 minutes per side. Place browned tortillas on prepared baking sheet.
  • Cut three baby ghosts from one slice of mozzarella cheese. Cut friendly ghost from another slice of mozzarella cheese. Cut Pac Man ghost from slice of mozzarella cheese using egg shaped cookie cutter. Using kitchen shears, cut zigzag pattern from bottom. Cut thin strips from slice of mozzarella cheese for the mummy pizza. Cut Jack O'Lantern from slice of cheddar cheese.
  • Make spooky spider by slicing a black olive in half lengthwise. Cut 8 legs from sliced black olive. Cut 4 round eyes from sliced black olives. Cut 8 small eyes for baby and friendly ghosts and 1 smile from black olives. Cut eyes and mouth for Jack O'Lantern from scraps of mozzarella cheese.
  • Place 2 small black olive eyes on each of three baby ghosts. Place 2 small black olive eyes and mouth on friendly ghost. Place 2 sliced black olives on Pac Man ghost for eyes. Arrange mozzarella strips for mummy pizza and place 2 sliced black olives for eyes. Place mozzarella eyes and mouth, and bell pepper stem on Jack O'Lantern cheese.
  • Spread 2 teaspoons of pizza sauce on each of the tortilla crusts. Top one crust with 2 tablespoons of shredded mozzarella cheese. Leave the other crusts with just the pizza sauce. Bake in preheated 400°F oven for 6 minutes.
  • Remove from oven. Build spooky spider on pizza topped with shredded mozzarella cheese. Place other pizza toppers on remaining pizzas. Return to oven for 1 to 2 minutes or just until cheese starts to melt. (See Tip 3)

Notes

  1. Feel free to use store-bought pizza sauce instead of making your own.
  2. I use Mission tortillas because they are quite thin. The thinner the flour tortillas, the crispier the pizza crust will be. You can also use smaller tortillas, but will have more waste.
  3. Watch the pizzas carefully to ensure that the cheese doesn't melt too much. You want the cheese to just start melting, leaving the different figures visable.
