- 3 cups (3 ounces) Rice Chex (See Tip 1)
- ½ cup (3 ounces) bittersweet chocolate chips (See Tip 2)
- 2 ½ Tablespoons (1.45 ounces) creamy peanut butter (See Tip 3)
- 2 ½ Tablespoons (1.62 ounces) Nutella (See Tip 3)
- 2 Tablespoons (1 ounce) unsalted butter
- ¼ teaspoon Kosher salt
- 1 teaspoon vanilla extract
- 1 cup (4 ounces) powdered sugar
Line a half-sheet pan with parchment paper. Place Rice Chex in a large bowl. Set aside.
Add chocolate chips, peanut butter, Nutella, butter, and salt to a microwave-safe bowl or measuring cup. Heat in the microwave at full power in 20-second increments, stirring between each increment until the mixture is smooth and creamy. (See Tip 4)
Pour the chocolate mixture over the Rice Chex; gently stir with a silicone spatula to coat the Rice Chex thoroughly.
Place half of the powdered sugar in a gallon Ziploc bag. Add the coated Rice Chex and the remaining powdered sugar. Seal the Ziploc bag and gently toss to evenly coat.
Transfer the Puppy Chow to the parchment-lined baking sheet. Allow to cool completely.
Once cool, please transfer to a wire mesh colander; gently shake to remove the excess powdered sugar.
Store in an airtight container or package for gifts. Enjoy for up to a week.
Yield: 6 servings. (See Tip 5)
- May substitute Corn Chex or Crispix for the Rice Chex.
- I used Ghirardelli bittersweet chocolate chips. You can also use semi-sweet chocolate chips for a sweeter taste.
- For a more classic Puppy Chow, omit the Nutella and double the amount of peanut butter to ¼ cup total.
- If you have a 1200-watt microwave, reduce the power to 70%.
- For a full batch, multiply each ingredient by 4.
