Ingredients

Poppy Seed Dressing

  • 2 tablespoons (1 ounce, 28 grams) vegetable oil
  • 2 tablespoons (1 ounce, 28 grams) apple cider vinegar
  • tablespoons (0.66 ounces, 19 grams) granulated sugar
  • ½ teaspoon Dry mustard powder
  • 1 teaspoon (.07 ounces, 2 grams) poppy seeds

Salad

  • 2 ounces (57 grams) baby spinach (about 4 lightly packed cups)
  • 4 ounces (113 grams) fresh strawberries, hulled and sliced sliced (about 1 cup)
  • 1 ounce (28 grams) fresh mozzarella, torn into bite-size pieces (about ¼ cup) (See Tip 1)
  • 2 tablespoons (0.5 ounces, 14 grams) toasted sliced almonds (See Tip 2)

Instructions

Poppy Seed Dressing

  • Combine the sugar, apple cider vinegar, vegetable oil, mustard powder, and poppy seeds in a small mason jar. Secure the lid and shake to combine all ingredients. Set aside.

Salad

  • Arrange the spinach in a shallow serving bowl or platter. Scatter the sliced strawberries over the spinach. Tuck the mozzarella pieces among the strawberries and sprinkle the top with toasted almond slices.
  • Serve the dressing on the side or drizzle lightly over individual servings immediately before serving. (See Tip 3)
  • Yield: 4 servings.

Notes

  1. Fresh mozzarella is stored in liquid. To keep the salad fresh, drain the mozzarella well and press it between paper towels to remove as much moisture as possible.
  2. Spread the almond slices in a single layer on a baking sheet. Bake at 350°F for 8 minutes or until lightly browned. Watch carefully to prevent burning.
  3. If you're planning on leftovers, add the dressing to individual servings rather than adding it to the bowl of salad.
